If you are looking for a good book to help you get started, I can recommend the following books (click on the images for more details and online ordering info at Amazon).
If you're new to MIPS, I suggest reading the book 'See MIPS Run' by Dominic Sweetman.
If you're new to Linux kernel programming, take a look at: Understanding the LINUX Kernel: From I/O Ports to Process Management

And this is one of my favorites: building embedded Linux systems.
If you're familiar with MIPS, I suggest reading the NEC Manuals for the VR4131 processor. Check the hardware pages for a PDF download.
